Russian Potato Salad

Ingredients

  • 2 pounds small new potatoes
  • 8 green onions, thinly sliced
  • 4 tablespoons chopped fresh dill
  • 3 garlic cloves, chopped
  • 1/2 cup low-fat mayonnaise
  • 1/2 cup nonfat sour cream or plain nonfat yogurt
  • 2-3 tablespoons capers
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes until just tender. Drain well and cool until you can handle them.
  2. Cut the potatoes into cubes and lightly toss with the other ingredients.
  3. Chill until ready to serve.
