Chopped Chicken Salad

Ingredients
  

  • 3/4 cup chopped apple
  • 2 tablespoons lemon juice
  • 1/2 cup low-fat mayonnaise
  • 2 tablespoons chopped parsley
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1 cup chopped celery
  • 3 cups chopped chicken breast
  • 8 romaine lettuce leaves

Instructions
 

  • In a large bowl, combine all ingredients, except lettuce.
  • Toss to blend thoroughly.
  • Serve chicken mixture over lettuce.
