Chopped Chicken Salad

Ingredients
- 3/4 cup chopped apple
- 2 tablespoons lemon juice
- 1/2 cup low-fat mayonnaise
- 2 tablespoons chopped parsley
- 1/8 teaspoon pepper
- 1/8 teaspoon salt
- 1 cup chopped celery
- 3 cups chopped chicken breast
- 8 romaine lettuce leaves
Instructions
- In a large bowl, combine all ingredients, except lettuce.
- Toss to blend thoroughly.
- Serve chicken mixture over lettuce.
