Chilled Vegetable Avocado Soup

Ingredients
  

  • 1-15 oz.can spicy chili beans undrained
  • 12 oz. canned V8 vegetable juice
  • 1/4 cup lime juice
  • 1 large tomato chopped
  • 1 medium avocado cut into cubes
  • 1/2 cup chopped celery
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon Tabasco
  • 2 tablespoons nonfat sour cream

Instructions
 

  • Combine all ingredients except sour cream into a large bowl.
  • Mix well, cover and refrigerate for one hour.
  • Serve with a dollop of sour cream.
