Ingredients

  • 2 cups cooked brown rice
  • 2 teaspoons fresh lemon juice
  • 1 apple, cored and chopped
  • 1 teaspoon vanilla extract
  • 1/3-cup apple juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup honey, maple syrup

Instructions

  1. Preheat oven to 350 F.
  2. Combine all the ingredients in a casserole dish with a cover.
  3. Bake in a conventional oven for 45 minutes stirring once halfway through the cooking time.
  4. Serve hot or cold.
